Plum Chicken for Two

 


 

 

8 breaded chicken nuggets, baked and cut into fourths

8 baby carrots, washed and sliced

1/2 green or red pepper, cut into bite-size pieces

1/4 cup each minced onion and celery

     (or substitute 1 Tbsp dried minced onion and celery)

4 purple plums, washed, pitted and cut in bite-size pieces

1/2 of 6 oz jar of orange marmalade

1 Tbsp honey mustard

1/4 tsp dried ground ginger

pinch of hot pepper flakes to taste

1/4 cup slivered almonds

hot cooked rice

*optional: green beans and/or zucchini

While chicken nuggets are baking, place sliced carrots and green beans/zucchini in  2 qt microwavable baking dish.  Microwave on high for 3 minutes.

Add pepper, onions and celery and microwave for 2-3 more minutes.  (Microwave time may vary.)

Place plums in  microwavable bowl and microwave for 2 minutes.   Stir briskly with a spoon to mash the plums.  Add marmalade, mustard and spices.  Mix well.

Add plum mixture to vegetables.  Stir in the cooked, cut chicken nuggets and the almonds.

Reheat for 1-2 minutes if necessary and serve over hot cooked rice.
